Chicken Croissant Sandwich

I couldn’t figure out how to shorten this title and still make it easy to find on my website. Anyway, I decided to share one of my favorite quick recipes that is super healthy, and really anti-inflammatory. I am grateful for everything I have learned about inflammation and am so surprised by the difference it has made in so many aspects of my life by eating with inflammation in mind. But that is a story for another day.

Just a couple of notes beforehand. This recipe is super adjustable depending on your likes and dislikes, allergies, etc. This is a basic recipe based upon what my family likes to eat, so make this recipe your own by changing up the ingredients. Chicken Croissant Sandwiches

1 can Chicken (12.5 oz) or any other kind of canned meat, leftover meat, hard boiled eggs, or you can leave the meat out.

1 onion roughly chopped

3 Stalks Celery

2 Carrots, peeled

1 – 2 cups Broccoli

2-3 Tbsp Sweet Relish (optional)

1/2 tsp Garlic Powder

1/4 to 1/2 cup dressing – I use mayonnaise, but any kind of salad dressing will work.

Salt and Pepper to taste

Croissants – or any type of bread, roll, tortilla, pita, etc.

Chop the vegetables finely by hand or add vegetables to a food processor roughly chopped and pulse until desired consistency is reached. I wouldn’t recommend pulsing more than about 10 times, but it’s really up to you and your taste. Transfer to a large mixing bowl and add the relish, chicken, garlic powder, dressing and salt and pepper. Mix thoroughly adjusting dressing to your desired consistency. Don’t start with too much. Cut croissants and fill with mixture. Makes approximately 10 – 12 large croissant sandwiches.

Some additions that you might consider – grated cheese or sliced cheese on top, dried cranberries, sundried tomatoes, mandarin oranges, grapes, peppers, various kinds of pickles, olives, avocado instead of mayonnaise, etc. The sky is the limit!
