There is only one good way to eat green beans, and this is it!

Roasted Green Beans

I think I have mentioned several times that I don’t really like green beans. But, I am convinced that no matter the food, it can be prepared in a way that I like it, somehow. I just don’t know how to do that with the foods I don’t like usually. But, I have found that roasting green beans makes them palatable to me. Not just palatable, I really enjoy them like this.

Today I thought I would share with you my recipe. It is super easy, just like roasting any vegetable, and in the end they taste and smell like french fries. This makes them great for all the kids out there who hate green beans. If they can get past the visual of it being a green bean, they will love them! This recipe doesn’t have too many measurements as you can just adjust to how ever many beans you have.

Roasted Green Beans

  • Fresh Green Beans – I have never tried it with frozen, it may work, but definitely not canned.
  • Oil – Use something with a high smoke point as they will be in a very hot oven.
  • Salt and Pepper to taste

Preheat oven to 450 degrees. Rinse the green beans and then pick off the ends so you have fresh pieces. I leave them whole as well, so they are long like french fries. Lay out on a towel and pat dry, then place in a bowl. Add oil, usually around 1 tablespoon, but adjust for how many beans you have. Add salt and pepper and toss to coat.

Place on a rimmed cookie sheet that will hold all the beans without them being stacked too much. The closer to a single layer you can get the better, but a little overlap isn’t a problem.

Place the pan of beans on the bottom center of your oven. I don’t go right to the bottom, but one rung up from the bottom. Bake for 20-25 minutes depending on how roasted you want, stirring them about half way through. You may want to salt them again when you pull them out, but I would test one first.

This is my favorite way to eat green beans, but I did just pickle some last week, so we’ll see how they turned out in a couple of weeks and I’ll let you know if this is still the best way to eat them, or if there’s a new favorite!

I’m still looking for a good way to eat seafood, like shrimp and crab, so if anyone has a fantastic recipe for either of those, let me know!
